# Expert Suggestions:

01 -
  • Nutrient-Dense: Packed with fiber and vitamins from a variety of colorful root vegetables.
  • Texture Balance: Features a perfect contrast between tender roasted veggies, softened kale, and crunchy pepitas.
  • Flavorful Dressing: The warm, tangy shallot and Dijon vinaigrette ties all the components together beautifully.
02 -
  • Avoid Overcrowding: Spread the vegetables in a single layer to ensure they roast and caramelize rather than steam.
  • Warmth is Key: Serve the dressing immediately while warm to help slightly wilt the kale upon contact.
  • Allergen Care: This recipe contains dairy (feta) and mustard. If you have nut concerns, verify that your pumpkin seeds were not processed in a facility that handles nuts.
